I hope Jenny will forgive me for stealing her recipe for the cookie exchange. They sounded so good I had to make some pronto and I sent a baker's dozen to my partner. What attracted me -- besides the bourbon -- and the chocolate -- was the fact that they're supposed to get better with age.
I was stressing out over which cookies to mail because I have no idea which of my favorite cookie recipes stand the test of time as far as making it thru the mail during the holidays and still being edible upon arrival. Frankly, I'm not even sure how my cookies taste two days after I bake them because the husband and I snarfle them down so quickly.
Plus, this way, if Merriam in Toronto hates them, I can't point my chocolate-stained finger at Jenny.
I had to think long and hard about how to make brown balls look good in a photo.
But as it turns out, chocolatey bourbon balls are naturally photogenic. Especially when taken where all my photos have been snapped lately because it's the only place to capture what little natural daylight we have right now -- on the front porch rail with a fresh dusting of snow.
You can roll these in cocoa powder, like I did, or you can roll them in powdered sugar. I kinda wish I'd rolled some in sugar because I think they would have turned out looking something like this:

Jenny's Kentucky Bourbon Balls
1 box Nilla Wafers, crushed
1 c powdered sugar
1 1/2 c chopped pecans
3 T cocoa -- I just used regular old Hershey's cocoa powder but next time I make these I'll try something fancier.
5 T Light Corn Syrup
1/3-1/2 c kentucky bourbon
Makes several dozen. Mix all ingredients together to make a very very sticky dough. Form into balls and roll in more powdered sugar or cocoa. Store in a container lightly covered with wax paper. The longer these age the more mellow the flavor. Roll in more powdered sugar or cocoa if necessary before serving.

Wow these came out perfect!! Definitely not as pretty as yours but i was so happy with the outcome and will be making them again for sure. The flavor was amazing and they were also nice and light & just fell apart in my mouth. Thank you for the recipe!!
